What are you Replacing it with? - Be careful not to substitute junk food for the meat you’re no longer eating. Look out for foods that are high in carbohydrates - many people trying out vegetarian eating think they can get by on potato chips and bread. Try to eat foods that are high in protein AND include a moderate amount of unsaturated fats, for example peanut butter. For a list of healthy foods that you may never have seen before, check out the New Foods section.

Don't Forget your B-12! - Vitamin B-12 is an essential nutrient that is rare in plants. It is only required in miniscule amounts, but it’s still a very important vitamin. Make sure that you’re getting it somehow:

• B-12 is found in any good multivitamin.

• B-12 is added to many foods, including fortified breakfast cereals, and many vegetarian specialty products like soymilk and mock meats.

• Nutritional Yeast, a tangy-tasting powder found in health food stores, is a naturally-occurring source of Vitamin B-12.
