Red Lentil Dal with Coconut Rice

COCONUT RICE

Combine water and coconut liquid; cook rice as usual.

Heat oil in large skillet over medium heat. Cook garlic and onion, with most of each of the spices, until onion is tender and cumin seeds start to brown. Add lentils (and a bit of extra water, if they did not get to soak overnight) and cook, stirring frequently, until lentils begin to yellow. Add the rest of the spices, and correct spice to taste. When the lentils are properly cooked, mash until the dal has more of a pureed texture, and serve.
